BAINGAN BHARTA


BAINGAN BHARTA

Eggplant cooked with special blend of spices and peas



For this gravy you need

1 big sized eggplant/brinjal
2 medium sized onions
3 medium sized tomatoes
1/2 cup of fresh peas
1 tsp. of ginger- garlic paste
1/2 tsp. of turmeric powder
1 tsp. of chilli powder
1 tsp. of coriander powder
1/2 tsp. of garam masala powder
1 tsp. of cumin seeds
Salt
Oil
Preparation

Wash the brinjal well, apply oil and keep in microwave for about 10 mins(until the skin turns brown). Allow it to cool,peel the skin and chop them finely.

Chop the onions and tomatoes.

Heat oil in a pan, add cumin seeds, when it stops spluttering add the onions and saute it until they turn translucent.

Add ginger-garlic paste, saute them until the raw smell extracts from it.

Add peas and saute it well.

Add the tomatoes, along with turmeric powder, garam masala powder, chilli powder and coriander powder. Mix them well and  allow this to cook in medium flame.

When the tomatoes get cooked well , add the brinjals along with sufficient water and salt.

Keep stirring the gravy and let it to cook until the eggplant gets mixed well with the spicy sauce.

Delicious  Baingan Bharta is ready to be served.....



Serve it hot with roti's/naan...........:)


Note:
Don't worry if you don't have microwave , attach a wooden skewer to the brinjal, apply oil on its skin and show it on the stove in a low fire, make sure you keep rotating it until the skin turns brown and shrinks

MUSHROOM PEAS MASALA - STEP BY STEP

Mushroom and peas cooked in rich spicy sauce . This goes very well with roti's :)

For this gravy you need

10 - 15 nos. of Button Mushroom
1/2 cup of peas
1 tsp. of ginger-garlic paste
oil
Salt

For grinding 

2 onions
2 green chillies
2 tomatoes
Bay leaf
2 nos. of cloves
1" cinnamon stick 
10 nos. of cashews
1/2 tsp of turmeric powder
1 tsp. of chilli powder
1/2 tsp. of garam masala powder


Preparation

Heat oil in a pan, add the bay leaf, cloves and cinnamon, saute them.Add the chopped onions, fry until they turn translucent.


Add green chillies,saute for a  min.


Add the  tomatoes with turmeric ,coriander,chilli and garam masala powders. Mix them well.  Add cashews ,saute them well until  the tomatoes gets cooked well.


Allow it to cool and grind them to a smooth paste adding little water.


Heat oil in a pan, add ginger garlic paste and saute them until the raw smell extracts from it.


Add peas and fry them until they get cooked in a medium flame.



Now add the grinded paste with sufficient water and allow it to boil.


Add the chopped mushrooms ,along with salt,cover and  cook  for 10 mins. in low flame.


Delicious Mushroom Peas Masala is ready to be served......



Serve it hot with Roti's :)

Note:You can also add fresh cream to give more taste to this gravy

Poori with Potatoes Peas Masala


Poori with Potatoes Peas Masala


This is a traditional breakfast of South India. Poori's taste great when served hot and this is loved by all most everyone.


For Poori's you need

2 cups of wheat flour
1/2 tsp. of sugar
2 tsp. of ghee
Salt
Oil for frying

Preparation

In a bowl, mix flour and salt, add water little by little to make a dough. Finally add ghee and knead it well. (This dough must be little harder than the chapathi dough).

Cover with a damp cloth and let the dough rest for atleast half an hour.

Make small sized ball out of it, dust it in flour and roll them into a flat ,round shaped one.(roll them slightly thicker). If you want a perfect round shape just use a container lid and press it hard so that the edges get trimmed.Repeat the same for the rest of the dough

Heat oil in a pan, and deep fry them to make soft , crispy poori's.

Now let us prepare potatoes with peas masala.

For potatoes with peas masala you need

3 boiled potatoes 
1/2 cup of cooked peas
1 medium sized onion (finely chopped)
1 tsp. of ginger garlic paste
1/2 tsp. of turmeric powder
1 tsp. of chilli powder
1/2 tsp. of garam masala powder
1/2 tsp. of cumin seeds
Salt
Preparation

Heat oil in a pan, add cumin seeds and chopped onions, saute them until they turn translucent.

Add the ginger-garlic paste , saute them until the raw smell extracts from it.

Add potatoes along with  turmeric powder, chilli powder and garam masala powder and mix them well.

Now add the cooked peas along with salt and mix them gently . 

Potatoes Peas masala is ready to be served with Poori's.

Serve the Poori's hot and enjoy with potatoes and peas masala :)


Note: If you want the masala to be gravy,you can add little water, when it boils, switch off the flame and garnish with fresh coriander leaves:)

SPICY RAW BANANA FRY - STEP BY STEP


SPICY RAW BANANA FRY

This is a simple,spicy, delicious fry with raw banana. You can have this curry with plain rice or with simple dal fry  :)

For this fry you need

3 medium sized raw banana
2 onions
3 medium sized tomatoes
1 tsp. of sambar powder
Salt
Oil

For Seasoning

1 tsp. of mustard and urad dal
2 tsp. of chana dal
A sprig of curry leaves
2 red chillies
4 garlic flakes(crushed)


Preparation

Heat oil in a pan,add mustard, when they stop spluttering add the urad dal followed by curry leaves.Add chana dhal, fry them until they turn slightly brown.


Add the red chillies ,saute it for a min,then add crushed garlic flakes and saute it well. 



Add  chopped onions and saute them until they turn translucent.


Add chopped tomatoes along with  sambar powder and salt.


When the tomatoes get cooked well, add the chopped raw banana and mix them gently.


Add 1/4cup of water and close the pan.


Keep stirring in between .Finally when the raw banana's gets softened , garnish with fresh curry leaves.

Spicy Raw Banana (Vazhakkai) Fry is ready to serve.......



Serve it hot with simple Dal Fry/Curd rice :)

Note: Use very little water for cooking the raw banana's ,if you add more water the skin peels off.

COCONUT CHUTNEY WITH CORIANDER & CURRY LEAVES


COCONUT (THENGAI) CHUTNEY(WITH) CORIANDER AND CURRY LEAVES

Coconut chutney is a simple chutney that pairs up very well with Hot Idli's /crispy Dosa/s .
This is a common chutney we can see in almost all the South Indian breakfast . There are lots of versions in this chutney  and here comes my version . Try this out and enjoy the taste..... :)


For this chutney you need

3 tbsp. of fresh grated coconut
1 tbsp. of roasted channa dhal (pottukadalai)
A small sprig of curry leaves and few coriander leaves (this gives nice aroma to the chutney)
5 - 6 green chillies(acc. to ur taste)
A small piece of tamarind
Salt

For seasoning

1 tsp. of mustard and urad dal
A sprig of curry leaves
Preparation

In the jar , add the coconut, green chillies and grind them .

Now add the remaining ingredients along with salt and sufficient water. Grind them well.

Heat oil in a pan, add mustard seeds when they stop spluttering add urad dhal and curry leaves.

Finally add the seasoned ingredients in the chutney.

Serve them with Hot Idli's :)



NOTE: I normally add tamarind if my idli batter is not too sour .(based on the sourness of ur batter u can adjust the tamarind ). If my batter is too sour I prefer not to add tamarind in almost all the chutneys I prepare :)

BREAD BONDA - STEP BY STEP


BREAD BONDA

A tasty snack especially for children. This is quite easy to prepare and for the filling I made with potatoes and peas . You can adjust the flavor or add any vegetables as you wish for the stuffing and enjoy these crispy Bread Bonda's :)


For this bonda you need

3 potatoes (boiled and mashed)
1/2 cup of cooked peas
1 medium sized onion (finely chopped)
1/2 tsp. of turmeric powder
1 tsp. of chilli powder
1/2 tsp. of garam masala powder
1/2 tsp. of cumin seeds
5/6 bread slices
Salt
Oil for frying

Preparation

Heat oil in a pan, add cumin seeds and chopped onions, saute them until they turn translucent.Add the potatoes.



Along with the potatoes add the turmeric powder, chilli powder and garam masala powder and mix them well.



Now add the cooked peas along with salt and mix them gently . Allow it to cool



Trim the edges of the bread. Take one slice of bread, dip in water and place them between your palms and press them well to drain all the water. Place the filling in the center of this bread and pack them in such a way they get completely covered.


Heat oil in a pan, and drop these balls inside.


Fry until they turn golden brown and place it on a kitchen towel


Crispy Bread Bonda's are ready to serve :)



Serve it hot with tomato ketchup :)
