COOKING WITH SEEDS - CORIANDER SEEDS 

Hi Friends,

I am very excited to announce that I am guest hosting COOKING WITH SEEDS EVENT -  brain child of PRIYA a wonderful chef, as you all know and this is my FIRST Event too.

I really thank Priya for giving me this opportunity and  its definitely an honor to host this event and the seed I have chosen is coriander. :)

CREAMY & CHEESY CAULIFLOWER SOUP (STEP BY STEP)

Cheesy ,Creamy Cauliflower Soup as the name says this is definitely a delicious soup. Undoubtedly the kids will love this a lot as we are adding grated cheese in it :). This is a simple soup which has a rich taste.

For this Soup you need

1 cup of cauliflower florets
1 small carrot(Peel the skin and chop it )
1 onion - Chopped
4 nos. of garlic - Chop them finely
2 tsp. of corn flour
1 cup of milk
2 tsp. of Grated cheese 
Salt
Pepper
Butter/Olive Oil
Preparation

Heat butter/Olive oil in a pan. (I use both), add the chopped garlic and saute  , until they turn slightly brown.


Add the chopped onions , fry them until they turn translucent. 


Add the cauliflower florets along with carrots, saute for 2 mins.


Add 2 cups of water, close the pan and allow it to cook.


When the florets get cooked, turn off the flame and allow it to cool. 



Strain the water,grind them in the blender and filter it(by using the same water).


Add this filtered puree in the pan, meanwhile mix the cornflour in milk,along with salt.When the puree starts to boil, add this milk and stir it gently.


When it starts to boil, turn off the flame. Finally add grated cheese.

Creamy Cheesy Cauliflower Soup is ready to be served.............


Sprinkle some pepper and enjoy :)

ALOO PARATHA - RIYADH STYLE (STEP BY STEP)


ALOO PARATHA(RIYADH STYLE) - STEP BY STEP

Aloo paratha in riyadh style, what is so special about these paratha's????? . These paratha's are made only during the ramzan period. Duirng ramzan they put a stall outside a restaurant and they prepare this. You should see the large queue waiting for these paratha's and you also have  tokens issued ahead. 

Only two people will be standing in the stall,one preparing the paratha's and the other person puts in the tawa.Everything happens very fast.

The stuffing is very simple no  powders required,  so  let me go straight to the recipe.

 For this Paratha's you need

For the Stuffing

3 potatoes 
3 green chillies (finely chopped)
1 tbsp. of coriander seeds, grinded coarsely
Handful of fresh coriander leaves
Salt 

For the dough

2 cups of wheat flour
1/2 tsp. of sugar
1 tsp. of ghee
Salt
Water

Oil/ghee - for the paratha's
Preparation

In a bowl,mix the flour with salt and sugar. Add sufficient water to it.Mix well

Finally add the ghee and knead it well , until it forms a soft dough.

Cover and keep it aside for 30 mins.

Pressure cook the potatoes.


In a bowl, add the potatoes, along with chopped chillies and fresh coriander leaves



Now add the coriander seeds(grinded coarsely) along with salt. Mix it well (Definitely you will enjoy the smell of fresh coriander leaves and coriander seeds while mixing)



Now the filling is ready , Take a lemon sized ball form the dough , dust it in flour and roll them into a flat and round shaped one.Place the filling inside and close it well..


Now press lightly with your palm and dust it in the flour.With the rolling pin , roll them well or if you are scared that your filling might come out, then gently press then with your palm.(Quite somedays I used my palm ). 


Heat the tawa, place the Stuffed chapathi and apply  oil/ ghee on its sides as well as on its top.

When both sides are cooked well, remove from the tawa.


Aloo paratha's are ready to be served.....................



Serve it hot with raita's /Pickle's and enjoy :)

You will definitely enjoy the taste of this paratha in every bite .

Quick and Easy Tomato Soup (Low Calorie)


TOMATO SOUP - QUICK AND EASY

As  the name suggests this soup is very easy and also quick to prepare. The ingredients are going to be very less and the end result you have a tangy tomato soup in a jiffy :)

This is  a  low calorie soup since no frying is necessary and  what are you waiting for , immediately prepare this soup and no doubt it  will turn out to be one of your favorite too........

For this Soup you need

2 medium sized tomatoes
2 nos. of garlic
Small piece of ginger
Salt
Pepper

Preparation

Wash and chop the tomatoes.

In a pan , add the chopped tomatoes, garlic and ginger along with sufficient water.

Close the pan, allow the water to boil. When the water boils, turn off the flame (you can see the tomatoes must have turned soft and the skin that peels from it)

Allow it to cool, Grind them in  a blender.

Again pour this puree in a vessel, add salt and allow it to boil. 

Tomato soup is ready,to be served........

Garnish with coriander leaves ..........


Sprinkle some pepper and Serve it hot....................

Note :
Soup consistency depends upon the water being added, adjust the water acccording to it.

For children's if needed you can filter the soup .

RAJMA MASALA GRAVY - STEP BY STEP


RAJMA MASALA GRAVY - STEP BY STEP

This is an healthy side dish with rajma ( kidney beans) cooked in spicy sauce made with onions and tomatoes. This goes very well with chapathi's/Naan's/Poori's :)

For this gravy you need

1 cup of rajma
2 onions
2 tomatoes
1 tsp. of ginger-garlic paste
Bay leaf
2 nos. of cloves
1" cinnamon stick 
1/2 tsp. of turmeric powder
1 tsp. of chilli powder
1 tsp. of coriander powder
1/2 tsp. of garam masala powder
Salt 
Oil
Preparation

Wash and soak rajma overnight  or for about 9 - 10 hrs.


Pressure cook until rajma turns soft(5-6 whistles) and keep it aside (don't drain the water ).  Heat oil in a pan, fry cinnamon, cloves and bay leaf.


Add the chopped onions, fry until they turn translucent,now add the ginger garlic paste and saute it until the raw smell extracts from it.


Add the chopped tomatoes along with the chilli powder,turmeric powder, coriander powder, garam masala powder and  mix them gently, allow the tomatoes to get cooked well.Keep stirring the masala now and then.


When the tomatoes get cooked well along with the masala's, add the cooked rajma along with the water we have pressure cooked and salt. Cover and cook in  low flame until the gravy gets thickened and rajma combines well with the gravy.


when the gravy thickens, garnish with fresh coriander leaves.

Rajma masala gravy is ready to be served..


Serve it hot with Chapathi's/ Poori's and enjoy......... :)

TOMATO CHUTNEY WITH CHANA DAL

Tomato chutney , we normally prepare this chutney with onion, tomatoes and redchillies, but adding chana dal gives a different taste and flavor to this chutney. Do try this out and you will definitely agree with me :)

For this chutney you need 

2 medium sized onions
3 medium sized tomatoes
1 tbsp. of chana dal
8 - 9 red chillies (Acc. to ur taste )
Salt
Oil

For Seasoning

1 tsp. of mustard and urad dal
A sprig of curry leaves
Preparation

Chop the onions and tomatoes.

Heat oil in a pan , saute the onions until they turn translucent.

Add the tomatoes,saute it well.

Add chana dal, saute it until they turn slightly brown.

Add the red chillies and saute it .



Grind it with salt and little water.


Finally garnish the chutney with the seasonal ingredients.


Tasty Tomato Chutney is ready to be served.....




Serve it with Hot Idli's / Crispy Dosa's and enjoy...... :)

SODHI KUZHAMBU - STEP BY STEP


SODHI KUZHAMBU- STEP BY STEP

This is an unique recipe of Thirunelveli. I have already mentioned about this Kuzhambu in my Inji Thuvaiyal post.

The main ingredient for this kuzhambu is coconut milk,the vegetables are cooked in coconut milk along with cooked moong dal and  grinded paste.

Now start preparing your coconut milk and the rest is going to be easy . You will definitely enjoy this Kuzhambu as much as we did.

Serve this kuzhamku with hot rice and this combination pairs up very well with Inji Thuvaiyal, Potato Curry as side dishes :)

For this kuzhambu you need

1 cup of Moong Dal
3 cups of coconut milk (extracted from 1 big sized coconut)
1 medium sized carrot
1 medium sized potato
1 drumstick
Few nos . of beans and Saber Beans
1 Brinjal
1 medium sized onion
1 green chilly(split it lengthwise)
1 small sized Lemon (extract the juice from it)
Salt
Oil

For Seasoning

1 tsp. of mustard and urad dhal
A sprig of curry leaves

For Grinding

1 tbsp. of grated coconut
2 nos. of red chillies
2 tsp. of coriander seed
Piece of ginger and a garlic



Grind them to a paste by adding little water.

Preparation

Chop the vegetables and keep it aside, prepare the coconut milk.(If you have any doubts regarding how to prepare coconut milk,let me know)


In the Pressure cooker add  moong dal, wash it well . Add sufficient water along with a pinch of  turmeric powder, garlic and few drops of sesame oil.



 Pressure cook for  about 5-6 whistles or until the moong dal gets cooked well.


Heat oil in heavy bottomed vessel, add the chopped onion and green chilly. Saute it


Add the chopped vegetables and saute it for 5 mins.


Now add the THIRD milk to these vegetables.


Cover and cook until the vegetables get softened.


Now add the SECOND milk along with the cooked moong dal and the grinded paste, mix them gently.


Allow it to boil in a low flame and keep stirring in between, when the raw smell of the grinded paste gos off ,add the FIRST coconut milk.


Gently mix it well.Add salt and allow this to boil for about 2 mins.



Sodhi Kuzhambu is ready,now comes the final part temper it with the seasonal ingredients. 

Allow it to cool and add the lemon juice.

Tasty Sodhi Kuzhambu recipe is ready to be served.....


Serve it with hot rice rice and enjoy.......:)

NOTE:

Don't skip the lemon juice, as it enhances the taste of this dish.
