Kovakkai | Ivy Gourd | Tindora Chips  -  Today's post is all about a simple and tasty homemade chip made from a vegetable named Kovakkai (Tamil). It is also known in different names as Ivy Gourd | Tindora.
  
Chips is a part of accompaniment served in South Indian meal and the most commonly used vegetable is potato or raw banana. But with Kovakkai you might be wondering how it's going to be, some might have already tried it but for those who haven't tried making them, do try out, and definitely, you will fall in love with it.  So Let's get started.

First step: Wash and clean the vegetable.

Second step: Using a slicer, first trim the ends and discard them. Start slicing it thinly. (Make sure the slices are thin and avoid well-ripened tindora's)

Third step: Transfer the sliced pieces to a mixing bowl. Tip in turmeric powder, chilli powder, rice flour, asafoetida, and salt.

Fourth Step: Now gently start to mix until all the slices are coated well, ( Just sprinkle very little water if required). Cover and keep it aside for 10 minutes.  

Fifth Step: Meanwhile heat oil in a heavy-bottomed pan for frying. 

Sixth Step: When the oil turns hot, pour a small ladle of oil over the coated slices and mix it well.

Seventh Step: Add the chips in small batches and allow them to cook on both sides for about 3-5 minutes or until they turn crispy.

Eight Step: Remove the chips in a slotted spoon and drain them on paper towels. Once completed frying all, drop a few curry leaves fry them and sprinkle on top for garnishing. Serve it and enjoy.
