Mint Rice/Pulao
This is a simple and easy rice with fresh flavor of mint leaves . When my daughter came from school,she saw this green rice and gave a big smile . She came,kissed me and said I love this green rice mummy. To my surprise , she said mommy I will eat this myself. So I think how most of the mother's will be feeling on hearing such words.
Then came the interesting part, mommy How you prepared this rice without mustard and onions ?????????????. NOW I Know why she loves this rice :)
How to Prepare this easy , tasty mint/pudina rice?
For this rice you need
1 cup of cooked rice
1 cup of fresh mint leaves
1/2 cup of coriander leaves
10-15 nos. of small onions
1/2 cup of grated coconut
2 green chillies
1 tsp. of ginger garlic paste
Bay leaf
1'' cinnamon stick
2 nos. of cardamom,cloves
10 nos. of cashew nuts for garnishing
Salt
Oil
Ghee
Preparation
Heat oil in a pan, add bay leaf, cinnamon,cloves and caradamom, saute for a min.
Split and add the green chillies, saute it. Add the small onions and fry till they turn slighty brown.
Add the ginger-garlic paste, saute it well,now add the mint leaves .Saute it for a min
Add coriander leaves and saute it well. Now add the coconut and fry them for 3 mins.
Allow this to cool and grind it in blender to a smooth paste , along with sufficient water.
Heat ghee in a pan, fry the cashews and keep it aside for garnishing.
In the same pan, along with ghee , add oil, now add the grinded paste along with salt and stir it gently in a low flame.
Add rice little by little, and mix it gently, check for salt . Mix them gently in low flame for abt 3 mins. Finally garnish with cashews.
Tasty and easy Mint rice is ready to be served.................................
Serve it hot with any raita's or simple serve it with crispy onion cabbage pakoda's and enjoy :)
Note:
Be careful while adding green chillies, as they splutter.
You can also add a tablespoon of lime extract at the time of adding the grinded paste in the pan, this helps to retain the color of your rice.
You can add cooked corns,peas to make it more attractive for children to eat.

this is a wonderful recipe. I usually make this without coconut but today I wanted to try your version & surely it did not disappoint me. Nice blog too and also I want to add that I did reduce the amt of coconut & also added juice of 1/2 lime.
