Ghee Mysore Pak |Soft Mysore Pak - Mysore Pak is a unique sweet. It is delicious, melt in mouth sweet which is very popular in south India. 

With just three ingredients gram flour, ghee, and sugar this absolutely irresistible sweet, Mysore Pak is made. The proportion for preparing this sweet is one part of gram flour, two parts of sugar, and three parts of ghee.

First step: In a pan, dry roast the gram flour over low heat for 5 minutes or until raw smell goes off.

Second step: Using a siever, sieve the gram flour to make sure there are no lumps. Mix 1 cup of ghee to the flour and mix well until you get a smooth texture. 

Third step: Now let's start to prepare the sugar consistency. In a heavy-bottomed pan, add sugar and water. Stir it gently until the sugar dissolves completely.

Fourth Step: Meanwhile grease a pan with some ghee and keep it aside.

Fifth Step: When the sugar syrup starts boiling, check for one string consistency.(Dip the spoon in the syrup and touch the sugar syrup with a forefinger. Now touch your thumb and forefinger together and pull apart slowly and gently. You will be able to see a single thread being formed without breaking)

Sixth Step: Once the sugar consistency is reached pour the gram flour mixture into it. Keep stirring gently and briskly until it gets blended well with the sugar syrup.

Seventh Step: Now pour the remaining ghee gradually and keep stirring consistently. Now you can see the mixture turning frothy and starts leaving the sides of the pan.

Eight Step: Remove from heat and immediately pour the mixture into the greased tray and spread it evenly. Allow it to cool for 15  minutes and cut into desired shapes.

The texture of Mysore Pak purely depends on the amount of ghee. When you add less ghee, the  Mysore Pak comes out hard and porous. Hence if you want your Mysore Pak to be soft then add the mentioned amount of ghee.
