SWEET POTATO HALWA   -  Hello Friends, Today I am sharing a healthy and delicious Halwa recipe made with Sweet Potato.As this vegetable is loaded with lots of nutrients it can be included regularly in our diet. One such way is by preparing this rich and flavourful dessert. 

I have also prepared a Mixed Vegetable Sambar| Kadamba sambar, this is  a sambar made with lots of vegetables which includes Sweet potato also and in future I have planned to try few recipes with this vegetable and will share it with you all.

The main ingredient for this recipe is Sweet potato, ghee and sugar. To make it even more healthier I have replaced sugar with jaggery. 

So let's get started.


First step: Pressure cook the sweet potatoes for 3 whistles . When the pressure is down,remove them and keep it aside to be cooled.

Second step: Once cooled down, peel the skin off and mash the sweet potato well.  

Third step: In a heavy bottomed pan, add ghee. when it turns warm add crushed nuts and saute it for a min. Now add the mashed sweet potato and keep stirring for about  2 mins.

Fourth Step: Add jaggery ,cardamom powder with a pinch of salt . Mix well. Add remaining ghee gradually and keep stirring.

Fifth Step:  When the halwa , when stirred , starts to leave from the sides of the pan and ghee oozes out.Remove from heat, garnish with crushed nuts and enjoy.

A rich and nutritious dessert with Sweet Potato very easy and quick to prepare.

Ingredients

  • 2 sweet potato
  • 1/4 cup of jaggery
  • 4 tbsp. of ghee
  • 1/2 cup of Mixed nuts, chopped
  • 1/2 tsp. of cardamom powder
  • A pinch of salt
  • Few saffron strands - garnishing (optional)

Instructions

  1. Pressure cook the sweet potatoes for 3 whistles. When the pressure is down,remove them from the cooker and keep it aside to be cooled.

  2. Once cooled down, peel the skin off and mash the sweet potato well.

  3. In a heavy-bottomed pan, add a tbsp. of ghee. when it turns warm add crushed nuts and saute it for a min. Now add the mashed sweet potato and keep stirring for about 2 mins.

  4. Add jaggery, cardamom powder along with a pinch of salt. Mix well. Add remaining ghee gradually and keep stirring.

  5. A point comes when the halwa,  stirred, starts to leave from the sides of the pan and the ghee oozes out.

  6. Remove from heat, garnish with crushed nuts and enjoy.

Notes

  • Sweet potatoes are sweet in nature so accordingly, I have added jaggery. So based on the sweetness of the sweet potato you can adjust the taste

  • Chopped nuts used are cashew nut, pista, and badam. I have crushed them roughly, added them while preparing halwa, and reserved some for garnishing.

  • Adding a pinch of salt lifts up the taste and flavor of the recipe.so don't skip it
