HOT AND SOUR SOUP   -  Hello Friends, Today, I am sharing a very popular soup in Indo-Chinese cuisine- Hot and Sour soup. This soup is a perfect accompaniment to have in crisp weather. With a unique taste and loaded with fresh vegetables that are cooked along with warm spices, this is sure to be a great starter.

Vegetable Hot and Sour Soup - You can try this soup with various combinations of vegetables and I have used vegetables that are commonly available in all seasons. Apart from the veggies, this soup has three main ingredients - chili sauce, black pepper powder, and vinegar. As the name suggests the soup tastes hot or spicy due to the chili and pepper powder, and sour taste from the vinegar.  The only time-consuming process is taken in preparing the vegetables while the rest of the cooking is easy.

Now the vegetables I used for this soup are cabbage, capsicum, carrot, beans. You can also use vegetables like mushrooms, bamboo shoots, bean sprouts. So let's get started and learn how to make this soup.

First step: Prepare the vegetables required for the soup. Cut the vegetables into juliennes.

Second step: In a heavy-bottomed pan, add oil, when it turns hot add finely chopped ginger, garlic, and green chilli. Saute for a minute.

Third step: Add all the vegetables and toss them gently for a minute.

Fourth Step: Pour water and allow it to boil. When the vegetables are half cooked add soya sauce , red chilli sauce, vinegar along with salt and sugar.

Fifth Step:  Add a pinch of sugar and black pepper give it a stir. Meanwhile, prepare the corn syrup.

Sixth Step: Add the slurry and mix it gently. The soup will start to thicken.

Seventh Step: Remove from heat and garnish with julienned ginger and fresh coriander leaves.
